Blanching Brussels Sprouts Before Freezing: Why?

In principle, you could also freeze Brussels sprouts raw. However, there is then a risk that germs will form when the winter vegetables are thawed.

It is therefore advisable to blanch the vegetables before freezing them. Blanching not only kills germs but also extends the shelf life. In addition, more vitamins, the color of the florets, and the taste are preserved.

How To Freeze Brussel Sprouts? how it works

  1. Put on a saucepan with lightly salted water.
  2. Clean the florets, cutting away a little from the stalk. This loosens the outer leaves, which you can then remove.
  3. Use a sharp kitchen knife to score an X in the stalk – this will cook the florets more evenly.
  4. Wash the Brussels sprouts under the tap.
  5. Blanch the Brussels sprouts in boiling hot water for two minutes.
  6. To keep the winter vegetables al dente, shock the florets in a container of ice water.

Freezing Brussels sprouts in two steps

If you want to freeze the sprouts, you will need a tray or large plate and a freezer bag or freezer-safe food storage box.

  1. Let the Brussels sprouts dry or pat dry with some paper towels.
  2. Arrange the blanched florets on the tray so they don’t touch each other.
  3. Place the tray in the freezer for an hour and a half. During this time, the surface of the individual florets is already covered by a thin layer of frost. This layer prevents the Brussels sprouts from clumping together later in the freezer.
  4. You can then put the Brussels sprouts in a freezer bag or a frost-proof fresh storage box and put them back in the freezer.

Brussels sprouts can be stored in the freezer for at least six months. To thaw, simply cook in boiling water.

Store Brussels sprouts in the refrigerator

If you want to eat the Brussels sprouts shortly after you have bought them, you should store them in the vegetable compartment of the refrigerator. It stays there for a few days, wrapped in a damp cloth or in a plastic box.
