How To Make Potato Flour

Would you like to make your own potato flour?

Potato flour consists of 100% potato starch and is a real all-rounder in the kitchen. To name just a few examples: You can use it to thicken soups and sauces, bread meat, or make all kinds of pastries.

In this recipe, I will show you step-by-step how to make pure potato starch from raw potatoes.

What is potato flour?

It is pure starch flour, as is corn flour. It consists of the starch obtained from potatoes and is therefore also referred to as potato starch.

Sometimes there is disagreement about the term. While potato flour usually means potato starch, there are regions where it consists of dried, grated potatoes or where it means boiled mashed potatoes.

How To Make Potato Flour?

Ingredients

  • 6 medium-sized potatoes (floury)
  • 1L warm water

Preparation

Step 1: Wash and peel the potatoes

Wash the potatoes thoroughly under running water and peel them.

Step 2: Grate potatoes

Grate the potatoes as finely as possible so you can get the maximum amount of potato starch out of them.

Step 3: Let it swell

Cover the grated potatoes with warm water and let them soak well. This will remove the starch from the potatoes.

Step 4: Strain

Pour the potato-water mixture through a fine sieve or strainer cloth, collecting the starchy water. Then let the water sit for about 20 minutes to allow the starch to settle to the bottom.

Step 5: Clean starch

Now carefully pour off the excess water and refill the starch with fresh water. Let the potato water stand again for about 20 minutes. The starch should now be significantly lighter and settle to the bottom again.

Step 6: Gain Strength

Now carefully pour off all the water, leaving only the starch at the bottom of the jar. The creamy potato starch can now be used if required. However, it only lasts longer if you dry it.

Step 7: Dry starch

Spread the creamy potato starch in a casserole dish and cover it with wax or baking paper. After about 24 hours, the moisture should have evaporated and the starch should have dried.

Step 8: Grind Starch

Put the dried starch in a food processor or coffee grinder and grind it into a powder.

Your potato flour is now ready. It is nearly 100% pure potato starch and should be clear white in color.

How do you store homemade potato flour?

Fill the homemade potato flour into a storage jar or mason jar and seal it airtight. It should be stored in a cool, dry, and dark place.

Properly stored, your homemade potato flour will last for years.
